Coconut Rice

    Cook: 2-3 hours

  • Ingredients

    • ½ cup (125 ml) instant white rice
    • ¼ cup (125 ml) dried papaya
    • 1 pinch of Labrador tea
    • 1 pear from a can
    • 1 can of Coconut milk


    • Boil enough water to fill a thermos. Take a thermos and pour the boiling water in to preheatit. Close the thermoswell and set it aside for at least 15 minutes.
    • While the thermos is preheating, dice the dried papaya and the pear.
    • Heat the coconut milk in a small saucepan on the stove or in the microwave.
    • Pour in the preheatedand drained thermos first the rice, the papaya, the Labrador tea and the diced pears. Fill with warmcoconut milk to cover the ingredients. Close the thermos and shake to mix all ingredients.
    • In a few hours, you’ll have delicious coconut rice to go!
