Cod fritters

  • Ingredients

    • 350 g (¾ lb) cooked cod
    • 2-3 cloves of garlic
    • ½ habanero pepper
    • 6 green onions
    • Fresh parsley
    • 4 eggs
    • 1¼ cup (250 ml) flour
    • ¼ cup (60 ml) corn starch
    • 1½ teaspoons (7.5 ml) baking powder
    • 1 lime, zest and juice
    • 1 lemon, zest and juice
    • Salt and pepper
    • Vegetable oil

    Preparation

    • Chop cloves of garlic, habanero pepper and parsley. Then take six green onions and dice them. Reserve.

    • Separate the egg yolks and white. Pour four egg whites into a big bowl and beat them until they form peaks. Reserve.

    • Pour the flour into a large bowl. Add the corn starch and the baking powder. Mix and then reserve.

    •  Cut the cooked cod into small chunks in a bowl. Add the green onions, garlic, hot pepper and parsley. Next add the zest and juice of the lime and thelemon. Add four egg yolks, the dry ingredients, salt and pepper. Mix well. Add the beaten egg whites and fold in gently.

    •  Drop balls of the cod mixture into hot oil. Let them cook and stir the fritters occasionally. When the fritters are nice and golden, remove them from the oil and place them on a paper towel.
