Spare Ribs

  • Ingredients

    • 700 g of pork spare ribs, count ½ piece (rack) per pot (about 350 g)
    • 2 peeled garlic cloves
    • 1 dry chili pepper cut in half

    Sauce

    • 1 cup (250 ml) sugar
    • 1 cup (250 ml) water
    • ½ cup (125 ml) white vinegar
    • ¼ cup (60 ml) soya sauce

    Sauce

    • 1 cup (250 ml) sugar
    • 1 cup (250 ml) water
    • ½ cup (125 ml) white vinegar
    • ¼ cup (60 ml) soya sauce

    Preparation

    • Take 2 Mason style glass jars of 500 ml capacity. Reserve.
    • Before cutting the ribs, pass your knife over the meatless side to remove the small membrane covering it. This will prevent the meat from shrinking on the bone. Cut the ribs and place in the pots with a garlic clove and a half dry chili pepper.
    • Prepare the sauce. Place sugar, water, vinegar and soya sauce in a small sauce pan. Bring to a boil. Pour the sauce in the pots up to the rim. Place lids and close. Place in a big pot of boiling water covering the jars up to the rim and let cook for 1 hour. After the cooking time, take the pots out using tongs. Eat right away or let cool and eat later.
