Summer Salmon Tartare

Ingredients
- 1 tartare-grade salmon fillet, skin removed
- 1 shallot
- 1 Cherry tomato
- 1 lime
- Olive oil
- Hot pepper flakes
- Salt and pepper
Preparation
- Cut the salmon in cubes. Cut the shallot into thin slices. Slice the cherry tomato. Cut a quarter of a lime and one thin slice.
- Dressing: in a little bowl, squeeze the quartered lime. Add a little olive oil, a pinch of salt, pepper and few hot pepper flakes.
- Place salmon cubes and vegetables on a plate. Pour the dressing over prepared plate. Salt and pepper to taste add lime slice to decorate.
